Here’s a nutritious and colorful quinoa salad recipe that’s perfect for a light meal or side dish!

Quinoa Salad

Ingredients:

  • 1 cup quinoa, rinsed
  • 2 cups water or vegetable broth
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 bell pepper, chopped
  • 1/2 red onion, finely chopped
  • 1 cup corn (fresh, frozen, or canned)
  • 1/4 cup fresh parsley or cilantro, chopped
  • 1 avocado, diced (optional)
  • Feta cheese or goat cheese (optional)

For the Dressing:

  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste
  • Optional: 1 teaspoon honey or maple syrup for sweetness

Instructions:

  1. Cook the Quinoa:

    • In a saucepan, combine quinoa and water (or broth). Bring to a boil, then reduce heat, cover, and simmer for about 15 minutes or until the quinoa is fluffy and the liquid is absorbed. Remove from heat and let it cool.
  2. Prepare the Vegetables:
